I like to say that my life as a coffee drinker divides into before and after having my first cup of coffee at Ten Belles in Paris. That was simply the best cup of coffee I`ve ever had and it completely changed the way I perceive this drink.
I still remember its fresh, almost raw taste, which overwhelmed me from the first sip. I was about to find out that such pure taste can only be achieved if the beans are partially roasted (that is for a short amount of time). This leaves no place for the bitterness that regular coffee has, all coming from the over-roasting of the beans. And, of course, the worse a coffee culture is, the more burnt it gets, so as to hide its already inferior quality.
Having said this (which is, by the way, everything I know about coffee!), I am now inviting you to discover my favourite places for a good cup in Amsterdam. Thank God there are quite a few where I can actually feel that I am having proper coffee!
